- Cut the sweet potatoes into even 1/2-inch cubes so they cook through without burning on the edges.
- Toss sweet potatoes with 1 tablespoon oil, garlic powder, smoked paprika, chili powder, 1/2 teaspoon salt, and black pepper.
- Preheat the air fryer to 390 F if your model recommends preheating.
- Arrange sweet potatoes in a single layer. Air fry for 12 to 16 minutes, shaking halfway through, until tender and browned at the edges. Cook in batches if needed.
- While the sweet potatoes cook, pat the chicken dry and cut it into even 1-inch pieces.
- Toss chicken with 1 tablespoon oil, onion powder, remaining 1/2 teaspoon salt, and a pinch of extra paprika or chili powder if desired.
- Air fry chicken at 390 F for 8 to 11 minutes, shaking or flipping halfway through.
- Check the thickest chicken pieces with a food thermometer. Chicken should reach 165 F internal temperature.
- Let the chicken rest for 2 to 3 minutes.
- Divide greens, rice, or cauliflower rice among 4 containers or bowls.
- Add cooked sweet potatoes, chicken, vegetables, sauce, and optional toppings.
