Ingredients
  

Chicken and Sweet Potatoes
  • 1.5 lb boneless skinless chicken breast cut into 1-inch pieces
  • 1.5 lb sweet potatoes peeled if desired and cut into 1/2-inch cubes
  • 2 tbsp olive oil or avocado oil divided
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp kosher salt divided
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
Bowls
  • 4 cups chopped romaine spinach, kale, cooked rice, cauliflower rice, or a mix
  • 1 cup corn black beans, cucumber, bell pepper, or cherry tomatoes
  • 1/2 cup Greek yogurt ranch chipotle yogurt sauce, salsa, honey mustard, or sauce of choice
  • Avocado lime wedges, cilantro, green onion, feta, or shredded cheese, optional

Method
 

  1. Cut the sweet potatoes into even 1/2-inch cubes so they cook through without burning on the edges.
  2. Toss sweet potatoes with 1 tablespoon oil, garlic powder, smoked paprika, chili powder, 1/2 teaspoon salt, and black pepper.
  3. Preheat the air fryer to 390 F if your model recommends preheating.
  4. Arrange sweet potatoes in a single layer. Air fry for 12 to 16 minutes, shaking halfway through, until tender and browned at the edges. Cook in batches if needed.
  5. While the sweet potatoes cook, pat the chicken dry and cut it into even 1-inch pieces.
  6. Toss chicken with 1 tablespoon oil, onion powder, remaining 1/2 teaspoon salt, and a pinch of extra paprika or chili powder if desired.
  7. Air fry chicken at 390 F for 8 to 11 minutes, shaking or flipping halfway through.
  8. Check the thickest chicken pieces with a food thermometer. Chicken should reach 165 F internal temperature.
  9. Let the chicken rest for 2 to 3 minutes.
  10. Divide greens, rice, or cauliflower rice among 4 containers or bowls.
  11. Add cooked sweet potatoes, chicken, vegetables, sauce, and optional toppings.
