Method
- Cut the chicken into even 1-inch pieces and pat dry with paper towels.
- Toss the chicken with oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Preheat the air fryer to 390 F if your model recommends preheating.
- Arrange chicken in a single layer in the air fryer basket. Cook in batches if needed.
- Air fry for 7 to 9 minutes, shaking or flipping halfway through.
- Toss the mostly cooked chicken with 1/4 cup buffalo sauce, then return it to the air fryer for 1 to 2 minutes.
- Check the thickest pieces with a food thermometer. Chicken should reach 165 F internal temperature.
- Toss cooked chicken with the remaining buffalo sauce.
- Divide rice, vegetables, and buffalo chicken between four meal prep containers.
- Store creamy sauce separately until serving.
