Air Fryer Buffalo Chicken Bowls

Ingredients
  

Chicken
  • 1.5 lb boneless skinless chicken breast cut into 1-inch pieces
  • 1 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup buffalo sauce divided
Bowls
  • 3 cups cooked rice brown rice, quinoa, or cauliflower rice
  • 4 cups broccoli green beans, celery, carrots, or mixed vegetables
  • 1/2 cup Greek yogurt ranch light ranch, blue cheese dressing, or tzatziki
  • Chopped green onion parsley, or extra hot sauce, optional for finishing

Equipment

  • 1 Air fryer
  • 1 Food thermometer
  • 4 Meal prep containers

Method
 

  1. Cut the chicken into even 1-inch pieces and pat dry with paper towels.
  2. Toss the chicken with oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Preheat the air fryer to 390 F if your model recommends preheating.
  4. Arrange chicken in a single layer in the air fryer basket. Cook in batches if needed.
  5. Air fry for 7 to 9 minutes, shaking or flipping halfway through.
  6. Toss the mostly cooked chicken with 1/4 cup buffalo sauce, then return it to the air fryer for 1 to 2 minutes.
  7. Check the thickest pieces with a food thermometer. Chicken should reach 165 F internal temperature.
  8. Toss cooked chicken with the remaining buffalo sauce.
  9. Divide rice, vegetables, and buffalo chicken between four meal prep containers.
  10. Store creamy sauce separately until serving.
